Kimmayco Chows Down with Forever 21: Healthy Chocolate Mousse

We’ve ran and stretched, we’ve got our flex on with some yoga in the London Eye, we got the mandatory protein post work out boost we needed with Laura’s egg cups… now it’s time for DESSERT! What better way to finish our day with Forever 21 than with a smooth and creamy rich chocolate mousse.

What if I told you there was a way of having a chocolate mousse that doesn’t come with any regrets, one that is actually good for you AND can be made within 15 minutes?

Meet my vegan chocolate mousse. Dairy free with lots of good and healthy fats – the main ingredient is AVOCADOS!

Avocados are actually classified as fruits, despite them having such a low sugar content. In Vietnam they are commonly used in milk shakes (Sinh To Bo) which is one of my faves! Avocados are rich in good unsaturated fats which is what gives it that naturally creamy texture. With healthy fats that are good for your heart, improve your skin tone and help with weight loss you really can’t go wrong.

The second main ingredient which gives the mousse that chocolatey flavour is the cacao powder. I use raw cacao powder because I like the flavour and it’s closer to it’s natural state – this also makes it a great option for raw vegans. Cacao is known to have anti-depressant properties which might explain why I reach for a chocolate every time I’m down!

Make it for some friends and don’t tell them there’s any avocado in it – they won’t have a clue (OK maybe suss out if they have any allergies first and then feed them)!

Serves 4

Ingredients

  • 1/4 cup of maple syrup (This can be substituted with honey, stevia, agave syrup or 4 pitted dates)Ad
  • 2 ripe avocados
  • 1 teaspoon of vanilla extract or pods from 1 fresh vanilla bean
  • 1/3 cup of raw cacao/unsweetened cocoa powder
  • Pinch of salt
  • Cacao nibs (optional)

You’ll need a food processor to make this work, a blender of any standard should be fine as the avocados are really easy to blend.

1. Scoop the avocados out of their skin and take the seeds out

2. Add all ingredients to the blender except the cacao nibs

3. Blend until smooth, have a taste and adjust amount of cacao powder or maple syrup to your preferences.

4. Garnish with Cacao nibs

Chill in the fridge for 15-30 minutes and serve. Let us know if you’re daring enough to try it!
