Forever 21 Activewear - Cook Together, Eat Together
After a long run or a tough workout the first thing to make noise would be our bellies! And boy do they rumble! A quick freshen up, change of gear into our Forever 21 casual wear and then off to cooking we go!
Your body needs major refueling after a run or a workout, your post workout meal is SO important. In order to replenish our energy stores and keep our muscles happy we like to get a nice and balanced helping of carbs, fats and protein. We operate a #NODIETZONE at Food & Lycra with the belief that a balanced lifestyle and balanced eating lead to a pretty damn balanced mind! And that's the end goal- to be happy... now pass me the carbs!
Our favorite foods are home cooked. We know where the ingredients come from so we don't have to worry about nasty additives and preservatives. Plus, cooking together is so much more fun!
One of the best post workout foods are our Sweet Potato Fritattas. Sweet potatoes are such a nutritious veg, not only do they taste good but they have fewer calories than normal potatoes and they are jam packed full of vitamin A- helping to strengthen your immunity and keep your skin healthy. With all the veggies we put in our fritattas they end up being full of nutrients and let's not forget all the protein and good fats we get from the added eggs!
Enough of the jibber jabber, let's get to cooking!
Here's what you'll need:
Recipe serves 5... or 3 really hungry girls!
- Two large sweet potatoes
- Twelve Eggs
- Four small peppers
- Ten cherry tomatoes
- A large handful of spinach
- Two sprigs of rosemary
- 200g Feta Cheese
- Salt and pepper
- 3-4tbsp olive oil
- Rocket- add to taste (optional)
- 1 tbsp single cream (optional)
Peel and chop the sweet potatoes into small chunks. Add them to a pan filled with boiling water so that the chunks are fully covered. Boil for about 15 minutes.
Once you can easily put a fork through a chunk take them off the boil and drain all the water away.
While you are waiting for the sweet potatoes to boil start beating your eggs and pre heat your oven to 180 degrees or gas mark 4.
Add your single cream... OK we may have added a bit more than a tablespoon of cream but be easy on it. You want your frittatas to hold together!
Add the olive oil to the eggs along with your salt and pepper.
Roughly dice your spinach, chop your cherry tomatoes and peppers and crumble the feta cheese ready to add to your eggs.
Mix all ingredients in together.
Prepare your muffin trays or mini tart trays with olive oil and then add your mixture. Try to make sure all your ingredients are covered by the egg mixture.
They're now ready to put in the oven. They should go in for around 15 minutes and then taken out to cool. A good test to see whether they're ready is to shake the tray. If they do not wobble- they're ready!
Let them cool down and then tuck in with some sour dough bread. YUM!
You must try these. I'm not a huge fan of eggs but this was a winner for me! Let us know if you make them.
